- Add the plain yogurt (or unsweetened applesauce) and vanilla extract to the butter-sugar mixture. Mix well until combined.
- In a separate bowl, whisk together the all-purpose flour, baking powder, and baking soda.
- Gradually add the dry ingredients to the wet ingredients, alternating with the milk. Begin and end with the dry ingredients, stirring well after each addition.
- Once the batter is smooth, stir in the prepared coffee mixture and mix until fully incorporated.
- Pour the cake batter into the prepared cake pan, spreading it out evenly.
- In a separate bowl, combine the ingredients for the streusel topping – flour, sugar, softened butter, and ground cinnamon. Use your fingers to mix everything until it resembles coarse crumbs.
- Sprinkle the streusel topping evenly over the cake batter in the pan.
- Bake the cake in the preheated oven for approximately 30-35 minutes or until a toothpick inserted into the center comes out clean.
- Once the cake is done, remove it from the oven and let it cool in the pan for about 10 minutes.
- After cooling slightly, transfer the cake to a wire rack to cool completely before serving.
- Optionally, you can dust the top of the cake with powdered sugar for an extra touch of sweetness.
